Total time:

Ingredients
  • 3 small cans of canned chicken, drained (you may also use boiled chicken, removed from bone, and chopped)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Rotel
  • 1 can chicken broth
  • 1 large onion, diced
  • 1 large bag of Doritos (at least a 10 oz bag)
  • 1 bag (12-16 oz.) grated cheddar cheese
  • salt & pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Add cream of chicken soup, cream of mushroom soup, Rotel, chicken broth, diced onions, salt & pepper in a large mixing bowl. Combine well.
  3. Using a fork, shred the chicken loosely and add to the mixture. Stir well.
  4. Crush the Doritos. Simply open a small opening in the bag to allow the air to escape. Roll up end loosely and crush with your hand until all the chips are crushed.
  5. Spray a 9x13 baking dish with cooking spray. Add ½ bag of the Doritos in the bottom of the pan.
  6. Slowly pour the soup mixture on top of the Doritos.
  7. Top with ½ bag of the shredded cheese.
  8. Place in 350-degree oven and bake 30 minutes.
  9. Remove from oven and top with the other half of the bag of Doritos. Top with the other half of the shredded cheese.
  10. Bake an additional 10 min.
  11. Remove from oven and allow to sit for approximately 10-15 minutes.
  12. Enjoy!
Notes
Original Rotel works for most family meals, but if you prefer more kick you can use "hot" Rotel.

Do not skimp on the Doritos! If you don't use at least a large bag, the dish will be too soupy.
