Leave it to me to keep coming up with easy meals! Like seriously! Who wants a long drawn out meal to prepare at the end of a hard day? At the very least, I love easy and quick weeknight meals that gets me out of the kitchen and relaxing, or not so much those other never ending night-time chores! This easy Grilled Roast Beef & Swiss Cheese Sandwich with Mushrooms and Onions is not only quick, it is a full satisfying meal that even the hubs loves!
This easy recipe takes less than 15 mins to make! Yes! You read that correctly! It’s like having a hot deli sandwich whipped straight up in your own kitchen! You can serve with a variety of sides. Whip out the old Fry Daddy and cook up some steak fries or potato wedges while you prepare the sandwiches, or simply serve with chips. Either way, this is a hearty sandwich that is sure to satisfy!

Grilled Roast Beef and Swiss Cheese Sandwich with Mushrooms and Onions
Ingredients
Deli Sliced Roast Beef
Swiss Cheese Slices, thin works best
1 medium onion, halved and sliced
Mushrooms, sliced
Texas Toast sandwich bread
2 Tbls. Mayonnaise, optional
1 Tbls. Dijon Mustard, optional
Instructions
Slice onions and cut slices in half.
Wash mushroom thoroughly and slice.
Saute onions and mushrooms in a small non-stick skillet with a small amount of cooking oil until onions are translucent. Remove and set aside.
While onions and mushrooms are cooking, mix together the Mayonnaise and Dijon Mustard sauce.
Very lightly butter the outside of each slice of bread. I use a paper towel to lay them on – butter side down.
Spread the Mayonnaise and Mustard sauce (or your choice of spread) lightly on each slice of bread.
Top each slice of bread with a slice of Swiss Cheese. You want a slice for the bottom and top of the sandwich (2 slices per sandwich).
Load the bottom of the sandwich high with deli sliced roast beef!
Top the roast beef with the sauteed mushrooms and onions.
Carefully flip the top of the sandwich onto the roast beef, onions and mushrooms.
Heat stove top griddle frying pan or skillet. Place sandwich on the griddle and grill until lightly toasted. Watch closely! Carefully flip and toast the other side.
Serve with a side of steak fries, french fries, tater tots, etc. for a super hearty meal!
