Decadent Pecan Pumpkin Cobbler
Need a dessert for the holidays? Look no farther! This Pecan Pumpkin Cobbler will satisfy that sweet pumpkiny craving we tend to get this time of year. I will go ahead and warn you this little dish is RICH. If you’re just making it for your family of 4-6, I would halve this recipe. I’m not sure what’s happening to my tastebuds in this season of my life, but I am loving me some pumpkin! This is the best pumpkin recipe I have found to date. So, without further ado…
Ingredients:
Bread:
- Self Rising Flour
- Salt
- Granulated Sugar
- Cinnamon
- Pumpkin Puree
- Evaporated Milk
- Butter
- Vanilla
Topping:
- Brown Sugar
- Granulated Sugar
- Pecans
- Water
Delicious dessert with simple ingredients I bet you have in your pantry right now!
In a medium sized bowl combine all of the dry ingredients for the bread.
Mix all wet ingredients for bread in separate bowl.
Combine dry and wet bread ingredients.
Mix well, a thick dough will form – keep mixing! 🙂
Pour in greased casserole dish.
Combine water and both sugars and pour on top of bread (yes it’s A LOT of water – trust me 🙂 ). Top with pecans.
Bake at 350 for one hour.
Top with ice cream or whipped cream… or both 🙂 and DIG IN!

- Bread Ingredients:
- 2 Cups of Self Rising Flour
- ½ Teaspoon of Salt
- 1½ Cup of Granulated Sugar
- 2 Teaspoons of Cinnamon
- 1 Cup of Pumpkin Puree
- ½ Cup of Evaporated Milk
- 1 Stick of Butter
- 3 Teaspoons Vanilla
- Topping:
- 1 Cup Granulated Sugar
- 1 Cup of Brown Sugar
- 1½ Cups of Pecans (I LOVE Pecans - feel free to put less)
- 3 Cups of HOT Water
- Preheat oven to 350 degrees
- In a medium sized bowl stir together; flour, salt, sugar and cinnamon. Set aside.
- In a smaller bowl stir; pumpkin, milk, melted butter, vanilla together.
- Pour wet ingredients into dry ingredients and mix well. Will create a THICK batter.
- Pour into casserole dish.
- For the topping:
- Stir water and both sugars together and spread over the bread mixture.
- Top with Pecans.
- Bake for 1 hour or until the middle is set.
- Let cool for 5-10 minutes then top with ice cream and enjoy!
This has quickly become one of my must haves for this holiday season! I will be taking this to many functions this year!
