Decadant Pecan Pumpkin Cobbler

Ingredients
  • Bread Ingredients:
  • 2 Cups of Self Rising Flour
  • ½ Teaspoon of Salt
  • 1½ Cup of Granulated Sugar
  • 2 Teaspoons of Cinnamon
  • 1 Cup of Pumpkin Puree
  • ½ Cup of Evaporated Milk
  • 1 Stick of Butter
  • 3 Teaspoons Vanilla
  • Topping:
  • 1 Cup Granulated Sugar
  • 1 Cup of Brown Sugar
  • 1½ Cups of Pecans (I LOVE Pecans - feel free to put less)
  • 3 Cups of HOT Water
Instructions
  1. Preheat oven to 350 degrees
  2. In a medium sized bowl stir together; flour, salt, sugar and cinnamon. Set aside.
  3. In a smaller bowl stir; pumpkin, milk, melted butter, vanilla together.
  4. Pour wet ingredients into dry ingredients and mix well. Will create a THICK batter.
  5. Pour into casserole dish.
  6. For the topping:
  7. Stir water and both sugars together and spread over the bread mixture.
  8. Top with Pecans.
  9. Bake for 1 hour or until the middle is set.
  10. Let cool for 5-10 minutes then top with ice cream and enjoy!
