Easy Delicious Lemon Squares
Ingredients:
1 cup softened butter
2 cups granulated sugar (divided 1/2 cup and 1 1/2 cups)
2 1/4 cups all-purpose flour (divided 2 cups and 1/4 cup)
4 eggs, room temperature
juice of 2 lemons
Instructions:
Preheat oven to 350 degrees.
Combine 2 cups flour, 1/2 cup sugar, and softened butter in a medium bowl.
Mix until well blended. Mixture will be crumbly.
Using an ungreased 9″x13″ baking pan, press the mixture into the bottom.
Bake in preheated oven for 15 minutes, or until the crust is golden brown.
While the crust is baking, mix the remaining 1 1/2 cups sugar and 1/4 cup of flour together.
Whisk the eggs.
Juice the 2 lemons using a small strainer to collect the seeds.
Whisk egg and lemon juice together and then stir into the flour and sugar mixture.
Pour mixture over the baked crust and bake for another 20 minutes.
Remove from oven and allow to cool. They will become more firm as the do.
Once cooled, cut into even squares and sprinkle with powered sugar.
Serve and enjoy!
