Strawberry season is in!
I love this time of year when fresh strawberries are everywhere. There is nothing better on a hot day to me, then ripe, red strawberries bursting with flavor. Now add that to cake and cream, and you will be having an wonderful day. This Strawberry Shortcake Trifle is so creamy and cool, it is an instant chill in this hot weather. It makes a great dessert to take to potlucks or serve at family gatherings. If there is a bunch of people I would make two, this Trifle does not last long. I brought this to our church for the 4th of July dinner, and it was gone before I made it to the dessert table. There was plenty of other desserts to eat, but my Trifle was scraped clean. Now you can make it for your family, and see how long it lasts!
Ingredients:
- one and one half cartons of strawberries
- one yellow cake mix baked (requires 3 eggs, 1/4 cup vegetable oil, and water)
- 3 cups heavy whipping cream
- 1/3 cup confectioners’ sugar
- trifle dish
I bake my cake in advance and freeze it. This is handy to keep on hand in case an event pops up. Then I can just take it out of the freezer, cut it into squares, and whip up a trifle in a jiffy.
For this Trifle I cubed my yellow cake mix into nice sized chunks. I do not defrost it. Once it warms up it adds moisture from the condensation. Making the dessert even better.
To make the cream I put the heavy whipping cream into my counter top mixer. I freeze the mixing bowl a few minutes to help speed the process. Then I add the confectioners’ sugar and start beating it until it forms a thick cream. I used to use my hand mixer, and it takes longer, but it will work. For hand mixing I would freeze the bowl and the mixer arms before beginning. These two ingredients create a decadent delicious cream that is so good in this trifle.
Next I washed and cut up my strawberries. Now all I needed to do was assemble my trifle. First I placed half of my cake cubes into the bottom of my trifle dish. Then I added half of the cream, or a little less, since I like a thicker layer at the top. Then half the strawberries were placed on top of the cream.
Then I repeated all the layers, adding the rest of the cake, cream, and then the remaining strawberries on top. You can reserve some cream to do on the very top to make a solid layer and decorate it with some specially placed strawberries if you so desire.
However you decide to top it off, this trifle is a crowd favorite. It is quick and easy to make, but is a wonderful treat to eat. I had several people come up to me to ask for the recipe. Hope your family enjoys it too!
