Hearty Potato Soup #Recipe

Want an easy recipe for a traditional comfort food? My family loves to eat Potato Soup on cool days. It has a thick, warm cream base and thick pieces of potato and ham. Top it with bacon pieces and cheese and it becomes a full meal in a bowl.

Hearty Potato Soup

IngredientsIngredients:

  • 1/2 stick of butter
  • 1 onion, minced
  • 3 carrots, diced
  • 2 tablespoons flour
  • 6-8 medium size potatoes (red skins will work as well)
  • 2 cups cubed ham
  • 5 cups milk or half and half
  • 2 teaspoons chicken bouillon (or 2 chicken bouillon cubes)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • bacon for garnish (optional)
  • grated cheese for garnish (optional)

The preparation time on this soup is less than 30 minutes. To start, I peel and cube the potatoes. I also make sure the carrots are cubed. By finely chopping or mincing the onion, they dissolve enough where you won’t get a chunk of onion (personally, I like the flavor).

Steps

Take the butter and melt it in your dutch oven, or chili pot. Add the onions and carrots. Saute them until they are soft (approximately 5 minutes, stirring every 30 seconds or so).

Whisk in the flour and cook for one minute. Add the potatoes, 4 cups of milk (or half and half) and the bouillon. Cook 15 minutes or until the potatoes are tender.

Add in the additional cup of half and half (or milk), ham, salt and pepper. Take the soup off the heat. The ham will heat up while it sits.

Bowl it up in your deepest soup or cereal bowls, add whatever you’d like on top. Some people like green onion, bacon, and/or cheese.

This soup gets better as it sits. I always have a bowl the next day because the flavor gets so much better. Bacon and cheese makes it so much better.

This makes a great dinner for the upcoming holidays. There will be lots of family around and a large pot of Potato Soup will make the cold days warmer. This meal is so quick and easy that you’ll make it all year.
