Something Fishy Going On
Do you ever hear moans and groans when making a fish dish for family dinner? Some kids can be averse to trying fish due to the smell or texture, so it can be tough to even get them to try a seafood meal to begin with. The most important thing about fish is that it should always be absolutely fresh. Fish that gives off a strong “fishy” odor is already at least one day old, and will put a damper on any dish. Once you’ve got fresh fish at hand, try a few of the following fun fish dishes that your family will actually eat:Fish Mousse – Fun and Delicious
Mold smoked salmon in a fish mold for a delightful salmon mousse. Use cucumbers, a black olive halved and a thread of pimento to create fish scales, eyes and a mouth. Decorate with fresh dill fronds. Substitute Dover sole, halibut or cod for a nice change.

An Upbeat Tuna Macanoodle Casserole
Use a regular macaroni and cheese recipe to create a fun fish meal. Prepare your favorite macaroni and cheese recipe as usual. Add in one or two cans of drained tuna and one package of frozen peas and carrots. Mix well. Place in a baking dish. Top with more cheddar or Jack cheese and a dusting of bread crumbs. Bake in a casserole dish until the top browns.

Crabby Tacos
Crabby tacos are another fun dish for the family. Prepare taco fillings of chopped lettuce, onion, tomatoes, Jack cheese and refried beans. Purchase 16 ounces of picked over cooked crab meat, a small can of tomato soup, and eight ounces of heavy cream. Heat soup, cream and crab together until sauce has thickened. If desired, add a dash of hot sauce. Place in a serving bowl. Now the family can create their own crabby tacos with their favorite flavors.

Seafarer’s Pizza
If your family enjoys homemade pizza, seafarer’s pizza is simple to make. Purchase frozen pizza dough, thaw, and place on a pizza stone or baking round. Blend together two cans of anchovies, drained and chopped fine, 1/4 teaspoon of capers, 1/4 cup of chopped black olives and 1 teaspoon lemon juice. Brush the pizza dough prepared pizza sauce and spread the anchovy mixture atop the pizza sauce, and then garnish with mounds of mozzarella cheese. Bake ten minutes or until cheese has melted. If preferred, substitute anchovies with shrimp or crab meat.Fish Quiche
Fish Quiche can begin with a prepared pie crust. For the filling, blend together a half cup of heavy cream, finely flaked white fish like sole or scrod, chopped parsley, dill and onion, one cup of Swiss, cheddar or Jack cheese, and one package of frozen spinach thawed thoroughly drained. Pour the filling into the pie crust and bake until the center is firm.
