An Upbeat Tuna Macanoodle Casserole

Use a regular macaroni and cheese recipe to create a fun fish meal. Prepare your favorite macaroni and cheese recipe as usual. Add in one or two cans of drained tuna and one package of frozen peas and carrots. Mix well. Place in a baking dish. Top with more cheddar or Jack cheese and a dusting of bread crumbs. Blend together two cans of anchovies, drained and chopped fine, 1/4 teaspoon of capers, 1/4 cup of chopped black olives and 1 teaspoon lemon juice. Brush the pizza dough prepared pizza sauce and spread the anchovy mixture atop the pizza sauce, and then garnish with mounds of mozzarella cheese. Bake ten minutes or until cheese has melted. If preferred, substitute anchovies with shrimp or crab meat.
Fish Quiche

Fish Quiche can begin with a prepared pie crust. For the filling, blend together a half cup of heavy cream, finely flaked white fish like sole or scrod, chopped parsley, dill and onion, one cup of Swiss, cheddar or Jack cheese, and one package of frozen spinach thawed thoroughly drained. Pour the filling into the pie crust and bake until the center is firm.
