4 30-Minute Recipes Every Mom Should Know

It is an understatement to say that moms are busy and highly in demand. To make life a little easier, every mom should have a several quick recipes in her kitchen arsenal that can be whipped up in no time. Here are 4 recipes that only take 30 minutes and will make both adults and kids smile:
1. BREADED LEMON CHICKEN
Ingredients
1lb chicken tenders or fillets
2 cups seasoned bread crumbs
½ lemon
3 eggs
1 cup vegetable oil
Directions
* Begin by creating a three step work station. For step 1, cover 1 plate in bread crumbs. For step 2, crack 3 eggs and whisk together. For step 3, place a paper towel over a plate. This last plate will be used to drain excess oil off of the cooked chicken pieces.
- Immerse 1 chicken fillet in the eggs.
- Cover the egg soaked chicken in the bread crumbs.
- Place the battered chicken in a very hot frying pan, using ½ inch of vegetable oil. Let the chicken cook until golden brown and flip. Cooking time for each side is usually 3 minutes.
- Set Chicken on the plate that is covered with a paper towel. Either squeeze lemon juice over one piece of chicken at a time. Or, wait until all the chicken is cooked and sprinkle lemon over entire plate.
Many pieces of chicken can be placed in frying pan at one time, but perform step 1 and 2 using one piece of chicken at a time. Experiment with different bread crumb seasonings such as garlic/herb or Italian flavored.
2. HOMEMADE MAC & CHEESE
Ingredients
1lb uncooked macaroni
2 cups shredded cheddar cheese
1 stick butter
2 cups milk
½ lb Velveeta cheese cut into thin slices
1 teaspoon Cayenne pepper
Directions
- Boil Macaroni until partially soft. There is no need to fully cook the pasta since it will cook more while in the oven.
- After macaroni is semi soft, pour it in strainer and rinse under warm water for two or three minutes. This rinse will remove all the starch. Preheat the oven to 350 degrees.
- Pour Pasta in a three inch deep baking pan, spreading the pasta out to make an even layer.
- Pour milk over macaroni.
- Place the strips of Velveeta cheese evenly over macaroni. Spread the shredded cheddar cheese over the Velveeta/macaroni.
- Sprinkle the Cayenne pepper as you like and then place in the oven at 350 degrees for 25 to 30 minutes. Remove and let cool for about 10 minutes.
3. MEATBALLS
Ingredients
1lb ground beef
1lb ground sausage
1 tablespoon Italian seasonings
2 beaten eggs
2 tablespoons Olive Oil
Directions
- Preheat oven to 300 degrees Fahrenheit. Pour Olive Oil into a 9×13 baking dish and coat the bottom of the pan completely.
- In a large mixing bowl, mix beef, sausage, eggs and seasonings together. Using your hands, mush all these ingredients together until it is completely blended.
- Scoop out chunks of this mix and shape into balls.
- Place balls on the baking sheet, careful to not allow the meatballs to touch each other. This will slow down cooking time.
- Allow to cook for 15 minutes. After 15 minutes, turn each meatball over to allow the other side to be exposed to direct heat. Cook another 15 minutes. Remove from oven after a total cooking time of 30 minutes and serve. Serve either alone or with your family’s favorite sauce or dips.
4. HOMEMADE JELLY & JAM
After tasting homemade jellies and jams, you and your family will never eat jarred jellies/jams again. Imagine the delicious possible ways to dress up a Peanut Butter & Jelly sandwich or toast every morning.
Ingredients
1 lb frozen fruit of your choice
2 cups sugar
Directions
- Allow frozen fruit to thaw fully.
- In a large saucepan, pour in fruit and sugar in pot.
- Allow fruit and sugar to reach a rolling boil. Allow to boil for about 5 minutes, stirring frequently.
- Remove from heat and allow to cool. The jam/jelly is ready to eat or pour it in glass jelly jars and store in the refrigerator.
