Strawberry Crunch Bars Recipe
Prep Time: 15 mins
Cook Time: 20 mins
Ingredients
1 pkg or approximately 20 Sugar Cookies
½ cup Sugar
6 tbsp Butter, melted
8 oz softened Cream Cheese
1 cup Heavy Cream
1 lb Fresh Strawberries
Instructions
Preheat oven to 325 degrees.
Spray a 9×13 baking dish with non-stick spray.
Using a food processor, crush one-half of the sugar cookies.
Add the melted butter and pulse until blended.
Press mixture into bottom of prepared pan.
Bake for approximately 20 minutes.
Set aside and allow to cool.
Wash, hull and slice strawberries.
Using a mixer or stand mixer, whip the heavy cream with sugar until peaks form.
Add in softened cream cheese and continue mixing until well blended.
Fold in the sliced strawberries.
Spread the mixture evenly on top of the cooled crust.
Crush the remaining half of sugar cookies in blender and sprinkle over the top of the mixture.
Pop into the freezer.
Allow to thaw 15-20 minutes before serving.
