Strawberry Crunch Bars

- 1 pkg or approximately 20 Sugar Cookies
- ½ cup Sugar
- 6 tbsp Butter, melted
- 8 oz softened Cream Cheese
- 1 cup Heavy Cream
- 1 lb Fresh Strawberries
- Preheat oven to 325 degrees.
- Spray a 9x13 baking dish with non-stick spray.
- Using a food processor, crush one-half of the sugar cookies.
- Add the melted butter and pulse until blended.
- Press mixture into bottom of prepared pan.
- Bake for approximately 20 minutes.
- Set aside and allow to cool.
- Wash, hull and slice strawberries.
- Using a mixer or stand mixer, whip the heavy cream with sugar until peaks form.
- Add in softened cream cheese and continue mixing until well blended.
- Fold in the sliced strawberries.
- Spread the mixture evenly on top of the cooled crust.
- Crush the remaining half of sugar cookies in blender and sprinkle over the top of the mixture.
- Pop into the freezer.
- Allow to thaw 15-20 minutes before serving.
- Enjoy!
As an alternative to packaged sugar cookies, you can make your own or use Pillsbury ready-to-bake sugar cookies.,
