Menu Monday- Bacon-Wrapped Smothered BBQ Pork Chops

Bacon wrapped Smothered bbq pork chops on a bed of potatoes

Bacon wrapped Smothered BBQ pork chops on a bed of potatoes

serves 2 adults

What you’ll need
* 4 bonless pork chops ( i like to cut the bone off myself it’s saves a little$)
* dried rosemary leaves
* ketchup
* soy sauce
* sugar
* water
* bread crumbs
* Italian seasoning
* 2 onions cut into slices
* 2 potatoes cut into slices
* foil

–Making the bbq sauce –

Put one cup of ketchup in medium size bowl. then add 1/3 cup worshire sauce (if you dont have worshire sauce add 2 teaspoon of soy sauce dont over do the soy sauce it tends to be saltly.) add 1/4 cup sugar (sugar will melt in oven so it’s okay if it’s a little grainy) add 1/4 cup water. mix together. set to the side.

– Seasoning the pork chops-

grab a store bag or zip lock bag,  place 1 cup breadcrumbs in then add 4 heavy handed sprinkles of itailan seasonings. and just throw one porkchop in at a time and shake!

-Starting the meal

preheat the oven to 375
Now grab a peice of foil, lay it flat on your working service you will need 4 peice of foil. the best way to messure this is hold your arms out directly in front of you and that’s how big each peice should be. Lay 4 peice of bacon down now place 1/4 of the potatoes down,
then place one porkchop on top of potado’s then heavly sprinkle 2x rosemary. Place 2 teaspoons of bbq sauce. then add 1/4 of onions (more or less depending on whether or not you love onions.) then carry the bacon slices over the top of conccockion and fold foil over top from both sides very tightly. then fold over ends and tighly countune to do this on both ends until you meet up with the meat. Do this 3more times. now place foil packages on a sheet pan and place in oven for 45mins.
Remove from oven, let stand 10 mins and then slice down center of package and enjoy. I like to make this with a white rice because it is so flavorful that a bland side works best.
