With the holidays officially upon us, entertaining family and friends are, no doubt, part of the fun! Cooking, baking, and a new recipe here and there is definitely part of my regular holiday routine.  I love it!  This year, I thought I’d make a traditional favorite but with an added twist. Pomegranate arils (seeds) make any batch of fudge a little more nutritious 😉 and even more delicious than usual.  That’s why I am so happy to share my Pomegranate Fudge recipe with you, thanks to POM Wonderful!

About POM Wonderful Pomegranates

Many of the benefits of fruits and vegetables are attributable to their antioxidant content, which comes from vitamins and other unique plant phytochemicals. Wonderful pomegranates are known for a number of important nutrients including potassium and a variety of pomegranate polyphenols, making them an important part of a healthy and balanced diet.  There are many other products such as the arils and juice you can find in your local grocery store.

My Review/Thoughts:

I remember in 6th grade, during a Greek study unit, trying pomegranate seeds and being pleasantly surprised by their taste.  This time around was no different.  To me, it is the light taste of sweetness – almost like an apple – but totally in its own right.  Then when you bite it, you crunch down on a bunch more antioxidants and goodness! That’s something to feel good about.

Not only did I make fudge, I also added them to my yogurt numerous times.  Keep that in mind when you don’t know what sweet snack you want, or even something to send with the kids or take to the office for yourself.

Pomegranate Fudge Recipe #POMWonderful #CrazyHealthy #Recipe #Review #ad
Ingredients
  • (2) 10oz bags dark chocolate morsels
  • ½ tsp vanilla extract
  • 3 tbsp butter
  • (1) 14oz can sweetened condensed milk
  • Seeds (Arils) from 1-2 pomegranates
Instructions
  1. Microwave all ingredients together for 1½ - 2 minutes (except arils)
  2. Grease glass or metal pan with non-stick spray (or thoroughly with butter)
  3. Pour mixture in pan
  4. Pour arils on top and swirl in if desired
  5. Put in fridge, let harden for at least 3 hours
  6. Cut into squares or desired sizes
  7. Enjoy!
