Hot Summer Meets a Hot Dinner!
My family and I love hot sauce. The flavor is good on just about anything, and I know we are not the only fans. The grocery store has buffalo pretzels, crackers, frozen chicken, and a ton of other foods flavored with hot sauce. I made this pasta one night for my family, and they loved it. It has been requested multiple nights, and since it is fast and easy, I can say yes. This spicy pasta would be great for the summer season as a main dish, or as a great side dish for a cook out. It also would be great when the weather is cooler and you start craving warm foods like soup, and chili. It would easily slip on to the list of cold weather, warm your soul comfort foods.
What you will need:
- 8 ounces cream cheese
- 1/2 cup hot sauce
- 1/2 cup water
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- a pinch of red pepper
- 3/4 cup of ranch dressing
- 12 ounce box of rotini
For the sauce:
Melt the cream cheese in a large pan on the stove on medium heat. Add the water, and the hot sauce and stir until the cream cheese is well melted and mixed with the hot sauce and water. Next measure out the seasonings into a small bowl, then add them to the sauce. Stir well, and cook for 5 minutes until the sauce is combined and creamy. Then add in the ranch dressing, and cook for ten minutes on low heat. The sauce should be creamy and not lumpy.
While you are cooking the sauce, boil your rotini pasta in a pot for about 10-12 minutes. When the pasta is done, drain it, and add it to the pan. Mix it well with the sauce, so the rotini is evenly coated.
Doesn’t that just look yummy! I serve celery as a side with my pasta. You can dip it into the sauce and it is very good, and healthy as well. I have at times added shredded chicken to this recipe. I use about 2 cups when I add it, but honestly I prefer it with no meat. This recipe is spicy. Not the burn your mouth, need immediate water spicy, but it is not mild. It is a pleasant zesty experience, that my family loves.
