Monday Mealplan # 2: Featuring Having Fun Saving

This week’s Monday Mealplan is featuring Having Fun Saving.  I had such a wonderful time searching through her recipes to find a few of my favorites for you.  While I was there I noticed she really loves smoothies and has several wonderful smoothie recipes for her readers.  If you are looking for juicing or smoothie recipes, Having Fun Saving is the place to go!

The theme for this week is easy!  Having Fun Saving has two themes to her recipes on her blog, inexpensive and easy!  Purchase all of the ingredients you need to make this week’s Mealplan for $125 ($20 allotment for pantry and seasoning items).

Monday – Stuffed Peppers – Make Ahead Meal

This is one recipe I wish I had seen during gardening season because you can make these Stuffed Peppers in advance, freeze them, and pull it out when you need it.  That makes Having Fun Saving’s Stuffed Peppers the perfect Monday Meal because who wants to cook on Monday?  Not me! 

Tuesday – Korean Beef

 Korean Beef in 15 minutes?  It almost sounds too good to believe!  Take a break on Tuesday with this Korean Beef recipe that is so easy you will never order it for takeout again!

Wednesday – Southwest Chicken Recipe

My family is traveling back to Florida from out West so I couldn’t resist adding something West-like for you this week.  This Southwest Chicken is a crockpot meal that you will have on your menu for years to come!  Enjoy.

Thursday – Pumpkin Grilled Cheese Sandwich

Pumpkin. Grilled. Cheese.  Do I need to say more?   In case you missed it, this is pumpkin grilled cheese!!!  Yummy! (Serve alone, with a salad, or your favorite chips)

Friday – Chicken Pad Thai

This Chicken Pad Thai is another great reason from Having Fun Saving to skip take-out this week!  See, she is helping you save and you haven’t even hopped over to her blog yet to see all of her great recipes and tips!

Saturday – Blackened Salmon with Maple Reduction

Blackened fish is the only way to go!  My husband is not a fish guy but he will eat any fish I give him if it is blackened.   If this week’s Saturday meal is a dinner for one, two, four, or a dinner party, this Blackened Salmon with Maple Reduction is the perfect relaxing Saturday evening meal.   (Serve with roasted vegetables)

Sunday Morning – Breakfast Strata

Sunday morning can be easy breezy or hectic and fast.  Regardless of your family’s Sunday morning routine, there is always time to make this beautiful strata.

Sunday – Bacon Wrapped Apple BBQ Chicken

Sunday and chicken are two words that are commonly found together in the South.  Try something new this week with this beautiful Bacon Wrapped Apple BBQ Chicken. It looks so amazing I’m not sure what to even make with it.  Will you need anything else on your plate?  I would be in love with just this but a baked potato may be nice too.
