Easy Chicken Recipes For Lunch

May 6, 2012 by Pam Maynard

I definitely love chicken dnd I know many people love it too. We always eat it but we are tired of eating the same old chicken recipes. A perfect example would be fried chicken. It is so common, that is why it is a great idea to give it a twist instead of just frying it. Let us explore some easy chicken recipes.

Chicken teriyaki

It is a Japanese inspired dish that is very easy to prepare. All you have to do is marinate the chicken with salt, pepper, soy sauce, vinegar and sugar for 30 minutes or up to overnight. After, place it in a pan or skillet with olive oil and bring it to a boil. Cook for another 10-15 minutes or until the chicken is tender. Add teriyaki sauce and sprinkle with sesame seeds (optional) to improve the flavor. Let it stand for 5 minutes before serving.

Chicken with parmesan cheese and mayo

All you need for this recipe is the main ingredients: chicken, mayonnaise and parmesan cheese (You may add other ingredients if desired). First, preheat the oven to 350F. Mix the mayonnaise and Parmesan cheese in a small bowl. Then, rub the chicken with the mayonnaise mixture and place the chicken in a greased oven proof dish. Bake it for 15 minutes or until it is begins to brown.

Pineapple chicken

Cut the chicken as desired and saut it in onions and garlic until the chicken starts to brown. Add enough pineapple juice (with pineapple chunks if you want) to make the chicken tender. Season with it salt Let it simmer for another 5-8 minutes or until the sauce thickens. Serve warm with rice.
