Cook to Impress: 3 Surprisingly Easy, but Impressive Chicken Dishes

January 22, 2014 by Pam Maynard

If you’ve got company coming, and still don’t have the slightest clue what to make, check out these easy, elegant chicken recipes that are sure to please any crowd! All recipes call for organic boneless, skinless chicken breasts, and a few staples you may already have at home. One package should serve four, but these recipes can easily be adjusted for a larger (or hungrier) crowd!

Cook To Impress 3 Surprisingly Easy, But Impressive, Chicken Dishes

1. Outstanding Italian Chicken

For an easy and flavorful Italian dish, try this. Coat egg-washed chicken breasts in panko bread crumbs, shredded Parmesan, and Italian seasoning. Bake until the juices run clear and breading is golden brown. Top with your favorite marinara sauce and lots of fresh parmesan cheese, and serve atop pasta or alongside a beautiful Caesar salad.

2.  Amazing Chicken & Potatoes

Dice a few large Yukon gold or red skin potatoes (depending on your family’s preference) and place in a large glass baking dish with your boneless skinless chicken breasts. Drizzle with olive oil and sprinkle with sea salt, lemon pepper, garlic powder, and rosemary. Roast until potatoes are golden brown and juices run clear.

3.  Slow-Cooked, Quickly-Eaten Chicken

This last dish is my personal favorite for entertaining, and people cannot believe how simple it is to make such a delicate, flavorful dish! There are a few more steps with this one, but it only takes about 15 minutes of prep, followed by a low-and-slow cook period. First, melt 1/4 cup of unsalted butter in a medium saucepan, add one packet dry Italian salad dressing mix and 3/4 cup of your favorite dry white wine. Add a can of condensed golden mushroom soup, and a half of a tub of cream cheese (I like the kind with onions and chives.) Simmer until the cream cheese is melted. Place your boneless, skinless chicken breasts in a slow-cooker, and cover with the sauce mixture. Cook over low for 4-5 hours. Serve over rice, and wait for the compliments to flood in!

Entertaining can be time consuming and menu planning can leave you stumped. Hopefully these three easy, elegant, delicious dishes will help make your next dinner a smash hit. All recipes call for 1 package boneless, skinless chicken breasts. For the best meals, you should find a chicken product that is all natural, and that comes from vegetarian-fed hens who are raised cage-free and without antibiotics or hormones. Using USDA-Certified Organic chicken breasts is a simple step to feed your family well. For more information on chicken products you can visit vender websites such as www.harvestlandbrand.com.
