For the Cupcakes
- 200 g (¾ cup + 2 tbsp) unsalted butter, softened
- 180 g (¾ cup + 2 tbsp) granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 200 g (1 ½ cups + 1 tbsp) all-purpose flour
- 1 tbsp baking powder
- 50 ml (3 tbsp + 1 tsp) sour cream or Greek yogurt
- 100 g (½ cup) chocolate chips
- 8–10 mini Oreos, crushed (plus a few extra to press into the centers)
For the Frosting
- 200 g (1 ⅔ cups) powdered sugar, sifted
- 100 g (½ cup) unsalted butter, softened
- 1 tsp vanilla extract
- Blue food coloring (gel recommended)
For Decoration
- Edible eyeballs
- 6 large chocolate chip cookies (cut in half)
Instructions:
Cupcakes
- Preheat oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners.
- In a large bowl, beat the softened butter, sugar, vanilla, eggs and sour cream until light and fluffy.
- Mix dry ingredients: In a separate bowl, whisk together flour and baking powder.
- Combine: Add the dry mixture to the wet mixture. Mix until just combined.
- Fold in: Stir in the chocolate chips and crushed Oreos.
- Fill tins: Spoon batter into the muffin liners, filling about ¾ full. Add a mini Oreo piece in the center of each muffin for a fun surprise.
- Bake: Bake 20–25 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
- Once muffins are completely cooled, use a small knife or cupcake corer to remove a small piece from the center of each muffin.
- Fill the hole with the finely crushed Oreos, then replace the “lid” of the cupcake you cut out (trim it if needed so it sits flat).
Frosting
- In a bowl, beat butter and sifted powdered sugar until creamy.
- Add vanilla and a few drops of blue food coloring. Beat until smooth and fluffy.
- Transfer frosting to a piping bag fitted with a grass/star piping tip (to create “fur”).
Decoration
