I am always looking to keep my produce fresher, especially when I am creating a delicious dish that only requires party of the item. I created a tasty meatloaf using fresh peppers and tomatoes. Having the Tomato and Green Pepper Keeper sure came in handy when I was ready to create my meal and still keep the remaining portions leftover fresh and crisp in my fridge.
Kristin’s Tasty Meatloaf Recipe:
Preheat oven to 350 degrees.
- 1.5 lbs of fresh ground chuck or beef
- 1/2 cup diced green peppers
- 1/2 diced tomatoes
- 1 tsp. salt
- 1 tsp. pepper
- 2 eggs (large)
- 2/3 cup bread crumbs
- 1 tbsp. chopped onions
- 1/2 tsp parsley flakes
- ketchup (to preferred taste)
Mix all ingredients together in large mixing bowl until thoroughly mixed and in a firm texture.
Add to your own loaf pan and add some tasty ketchup to the top for a savory flavor. Bake for 45-60 minutes or until meatloaf if a rich brown color and cooked thoroughly through.
Serve up with some tasty sides such as mashed potatoes and green beans and this will surely be a hit at your dinner table.
Thanks to the Good Cook Keepers, my pepper and tomatoes remained fresh and were available for my next meal.
