Ingredients:
- 10 oz container of roasted garlic hummus (or make your own hummus)
- ⅔ cup plain Greek yogurt
- 1 cucumber, peeled and diced
- 1 Roma tomato, diced
- ⅓ cup crumbled feta cheese
- ¼ cup kalamata olives, sliced
- 2 tbsp chopped parsley
Items Needed:
Measuring cups and spoons, cutting board, knife, spoons, platter or dish
Directions:
- Begin by thoroughly washing the cucumber and tomato. Once clean, chop the cucumber into small, bite-sized pieces and dice the tomato into similar-sized cubes for uniformity. Next, take the olives, slicing them into thin rounds to release their briny flavor.
- Finely chop a handful of fresh parsley, as it will add a vibrant color and fresh aroma to the dish.
- In your serving dish, start by spreading a generous layer of smooth hummus across the bottom, creating an even surface. Then, with a spoon, drop dollops of creamy Greek yogurt onto the hummus. Use the back of the spoon to gently spread the yogurt outward, ensuring it remains about ½ inch away from the edge of the hummus layer, allowing for a beautiful presentation.
- Now it’s time to assemble the toppings. Evenly scatter the chopped cucumber, diced tomato, sliced olives, and crumbled feta cheese over the yogurt layer.
This combination of ingredients adds a delightful mix of textures and flavors to the dish. To finish, sprinkle the chopped parsley over the top for a pop of color and a hint of freshness.
- Once completed, cover the dish and place it in the refrigerator to chill for at least 1 hour, allowing the flavors to meld together. This refreshing appetizer is now ready to serve, perfect for any gathering or as a light snack.
