Healthy Egg Muffin Cup Ingredients:

  • 4 eggs
  • ½ red pepper
  • 100 g (3/4 cup) Mozzarella
  • 10-15 olives
  • 30 g (1/4 cup) spinach 
  • Salt to taste
  • Pepper to taste

Healthy Egg Muffin Cup Instructions:

Preheat the oven to 350 degrees. Spray a muffin tin with non-stick spray or coconut oil

Prepare your vegetables:

Cut the olives into rings. Cut the pepper into small cubes. Chop the spinach finely.

Grate the cheese or use shredded Mozzarella cheese.

Once cooled, you place each egg muffin in a resealable bag or place a few of them in an airtight container. Store them in the fridge for up to 6 days. Every morning you heat one up in the microwave for 30-40 seconds.
