  • 4 eggs
  • ½ cup pumpkin
  • 1 teaspoon baking soda
  • 1 tablespoon of pumpkin pie spice
  • 2 tablespoons and 1 teaspoon of crushed pecans

1. Preheat oven to 350 degrees F and line a small loaf pan with parchment paper.

2. Beat eggs, pumpkin pie spice and baking soda until peaks start to form.
