My Thoughts
Have you ever wondered how restaurants are able to bring your meal to the table in a fourth of the time it would take you to prepare at home? Their secret, and yours now, is by using precision cooking. This method takes all the guess work out of cooking and is one that I have fallen in love with at home.
No more over cooked fish or charred steaks. Imagine having your protein coming out perfect each and every time. I know, a real game changer.
By cooking low and slow (which is the professionals tip on most proteins), you can enhance the flavor while ensuring the item is not overcooked. I love preparing salmon with this method. It’s really easy.
Here is my Precision Cooker recipe for Marinated Salmon
Ingredients
1-2 Salmon steaks per person
Freezer Bags
1 pat of butter per salmon steak
Jar of your favorite marinate
Directions:
Preparing the Salmon:
Place 1-2 Salmon steaks in a freezer bag
Add a pat of butter to bag for each Salmon steak
Add about 1/4 a cup of your favorite marinate to the bag
Press down gently to remove as much air as possible while sealing the bag
Continue the above for each serving
Setting up the Precision Cooker:
Using your stock pot (or pressure cooker liner), clamp the precision cooker to the side of the pot
Fill the pot with water about halfway between the minimum and maximum water level (you can add more if needed after adding Salmon)
Place the precision cooker on a trivet or hot pad to protect your counter tops
Plug the precision cooker into the power source (it will beep and light up)
Directions for cooking:
Gently place each bag of Salmon into the water and clip to the side of the top of the pan
Using the buttons along the top you will set the cooking temperature and cooking time
First button shows the temperature of the water in the pot
Second button sets the cooking temperature. Click on the button and then using the arrow on the right, increase until the display shows the correct cooking temperature. Salmon should be cooked at 135 degrees.
Third button is the cook timer. Click on that button and then using the arrow on on the right, increase the time until the display shows the correct time. Fresh or thawed Salmon should be cooked for 50 minutes. Frozen Salmon should be cooked for 70 minutes.
Once your setting are correct, make sure to click the middle button to start. This is important. The unit will turn off if you do not click the start button (just sayin….from someone that has done this more times than I care to admit).
Once the unit is set and turned on, the water will start to cycle around in the pan. This is why you clip the bags to the side of the pan. You don’t want the bags pulled up against or into the precision cooker.
That’s it. The timer will buzz when your Salmon is perfectly cooked. And the best thing about precision cooking is that if you get busy or don’t hear the buzzer, your protein will not continue to cook. It will be held at the perfect temperature for quite a while while you prepared side dishes.
