This seasoning is an exotic hand-crafted blend of 16 different spices that has a subtle but savory flavor profile! Ingredients include: Black Pepper, Black Salt, Cardamom, Carom Seeds, Cayenne Pepper, Cinnamon, Cloves, Coriander, Cumin, Fennel, Dried Fenugreek Leaves, Dried Mango, Paprika, Pomegranate Powder, Salt, and Sugar.
In addition to being a wonderful rub for anything you want to toss on the grill, this Keto friendly spice blend just makes everything taste so delicious. The other night we were planning on grilling out but the heavens opened and neither one of us wanted to stand in the rain watching the grill. So instead, I whipped out my Instant Pot and now have a new recipe to add to my rotation.
Instant Pot Chicken Masala
Recipe:
4-6 chicken thighs
2 cups chicken broth (or vegetable broth)
2-4 Tablespoons Mom’s Magic Masala
Salt and Pepper to taste
Directions:
- Set up your Instant Pot or Pressure Cooker and press the saute or manual button
- While the Instant Pot is heating up, open the chicken and liberally rub salt, pepper, and Mom’s Magic Masala on both sides of the chicken
- When the Instant Pot or Pressure Cooker is hot, add a tablespoon of butter or oil to the liner and place the seasoned chicken thighs in the butter or oil
- Brown the chicken thighs on both sides (3 minutes per side should be plenty)
- Pour broth over chicken thighs and gently move the chicken around in the pot while scraping the bottom of the liner to loosen any stuck bits of flavor
- Place lid on Instant Pot and make sure vent switch is in sealing position
- Press manual button and adjust time to 15 minutes if chicken is thawed / 25 minutes if chicken is frozen
- Once the chicken has cooked, allow 5-10 minutes for the pressure to naturally release – then flip the vent switch to venting and remove the lid
- Gently lift out the chicken thighs and place on a plate (cover to keep warm)
- Lift the liner out of the Instant Pot and pour liquid into a large measuring cup or bowl
- Return the liner to Instant Pot and add 1.5 cups of the drained liquid
- Press the saute button and bring liquid to a boil
- Allow liquid to cook down while you prepare side dishes
- Once the liquid has cooked down, place the chicken thighs back in liquid to warm
Easy to use and goes well with steamed vegetables
This chicken is awesome served with steamed vegetables or shredded on a salad. Honestly, the depth of flavor that is infused from the Mom’s Magic Masala has elevated this new chicken dish to our weekly menu plan. Oh, make sure you save the extra liquid to use as a soup base or broth in other dishes. You can make broth blocks by pouring broth in a plastic ice tray. Once frozen, dump out of ice tray and store the broth blocks in a freezer bag.
