You are going to love these adorable Easter Cookie Cups! Not only are these treats super yummy, but they are also super easy to make!

Nothing says Easter like these adorable Easter Bunny Cupcakes! Sit back and watch the kids squeal in delight when they see them! And, who knows? Maybe, you will love them just as much!

Ingredients:

Peeps cupcakes

For the cupcakes –

  • 1 c sugar
  • 1 c flour
  • ½ c cocoa powder
  • 1 t baking powder
  • ½ t baking soda
  • ½ t salt
  • 1 t vanilla
  • 2 eggs
  • 1 c milk
  • ½ c oil

For the frosting –

  • 1 c unsalted butter, softened
  • 4 c powdered sugar
  • 1 t vanilla
  • 1 t salt
  • 3 T milk
  • Green food coloring
  • Easter sprinkles
  • Peeps marshmallows

Directions:

  1. Preheat the oven to 350 degrees.  Line a couple of standard muffin tins with cupcake liners and set aside. 
  2. For the cupcakes – in the bowl of a stand mixer, combine the sugar, flour, cocoa, baking powder, baking soda, and salt.  Whisk to combine. Peeps cupcakes
  3. Add in the vanilla, eggs, milk and oil.  Mix on low until combined and scrape down the sides often. Peeps cupcakesPeeps cupcakes
  4. Using a measuring cup or similar, scoop the cake batter evenly into the prepared cupcake tins. Peeps cupcakes
  5. Bake in the preheated oven for 14-16 minutes or until the center is set.  Allow to cool completely before decorating.
  6. For the frosting – in the bowl of a stand mixer, combine the softened butter and about half of the powdered sugar. Peeps cupcakes
  7. Mix on low until combined, scraping down the sides often.
  8. Add in the remaining powdered sugar, salt and vanilla.  Mix on low until combined.
  9. Add in the milk and mix until combined, scraping down the sides often. Peeps cupcakes
  10. Add in the green food coloring – starting with just a little and adding more if needed to achieve the desired shade of green.  Peeps cupcakes
  11. Transfer the frosting to a piping bag fitted with a large star tip. 
  12. To assemble – once the cupcakes are cooled, pipe a large mound of frosting over each cupcake. Peeps cupcakes

Serving Suggestions

Serve these Peeps cupcakes on a colorful spring dessert tray for Easter brunch or holiday gatherings. They also make wonderful treats for classroom parties or spring celebrations. For an extra festive presentation, sprinkle pastel-colored sprinkles or edible glitter over the buttercream before adding the Peep on top.
