Ingredients:
Cupcake Ingredients:
- 1 cup all-purpose flour
- 1 cup sugar
- ⅓ cup + 1 Tbsp unsweetened cocoa powder
- ¾ tsp baking soda
- ¼ tsp salt
- 4 Tbsp unsalted butter
- ¼ cup vegetable oil
- ½ cup cold brew coffee
- 1 egg
- ¼ cup buttermilk (or ¼ cup milk + 1 tsp lemon juice – let sit for 10 min)
- 1.5 tsp vanilla extract
Frosting Ingredients:
- 1 cup fresh or frozen blackberries
- ¼ cup honey
- 4 oz cream cheese, room temp
- ¼ cup unsalted butter, room temp
- ½ tsp vanilla
- 1.5 cups powdered sugar
Directions:
Cupcake Directions:
- Preheat oven to 350 degrees F. Add cupcake liners to a cupcake pan and set aside.
- In a small bowl, mix together the flour, sugar, cocoa, baking soda, and salt and set aside.
- Melt the butter in a microwave-safe bowl. Then, to a large mixing bowl, whisk together the butter, oil, coffee, egg, buttermilk, and vanilla.
- Add the dry ingredients to the wet and mix together by hand until the batter is fully combined.
- Add 3 Tbsp of mixture into each cupcake liner. Bake for 22 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
- Transfer to a cooling rack and allow to come to room temperature before frosting.
Frosting Directions:
- While cupcakes are baking, make the blackberry sauce by adding the blackberries and honey to a small pot and bring to a boil over medium heat.
- Fully mash the berries as they begin to soften. Allow to boil for 10 minutes. The berries will thicken.
- Remove from the heat and push the sauce through a fine mesh sieve to remove any large seeds. Place the remaining liquid in the refrigerator to cool.
- Once the blackberry liquid has cooled (about 20 minutes), make the frosting. Add cream cheese and butter to a large mixing bowl and mix on medium-high speed for 1 minute.
- Reduce the speed and slowly add in the powdered sugar and vanilla. Pause to scrape the sides.
- Drop in 1 – 2 Tbsp of blackberry sauce and gently fold into the frosting. Taste, and add more blackberry sauce if a stronger flavor is desired.
- Frost and enjoy!
