Ingredients:

Expresso cupcakes

For the cupcakes – 

  • ½ c unsalted butter, softened
  • ½ c brown sugar
  • ½ c sugar
  • 2 eggs
  • 1 t vanilla
  • ½ c fresh-brewed coffee or cold brew
  • 1 ½ c flour
  • 1 T espresso powder
  • 1 ½ t baking powder
  • ½ t salt

For the frosting – 

  • 1 c unsalted butter
  • 4 c powdered sugar
  • 1 T espresso powder
  • 2-3 T coffee or cold brew
  • ½ t salt
  • Coffee beans, to decorate

Expresso cupcakes

Directions:

  1. Preheat the oven to 350 degrees.  Line a standard muffin tin with cupcake liners, set aside. 
  2. In the bowl of a stand mixer, combine the softened butter, sugar, and brown sugar.  Cream until smooth. Expresso cupcakes
  3. Add in the eggs, vanilla and coffee and mix until combined, scraping down the sides often.  Expresso cupcakes
  4. Add in the flour, espresso powder, baking powder, and salt.  Mix until combined, scraping down the sides as needed.  Expresso cupcakesExpresso cupcakes
  5. Divide the batter between each of the cupcake liners, filling each about ½-⅔ full. Expresso cupcakes
  6. Bake in the preheated oven for 14-16 minutes or until the center is set.  Allow to cool completely before decorating.  Expresso cupcakes
  7. For the frosting – in the bowl of a stand mixer, combine the softened butter, about half of the powdered sugar, espresso powder, and salt.  Mix on low until combined. Expresso cupcakes
  8. Add in the remaining powdered sugar and the coffee.  Expresso cupcakes
  9. Mix on low until combined.  Bump up the speed and mix on medium until the frosting is smooth and fluffy. Expresso cupcakes
  10. Transfer the frosting to a piping bag fitted with a large star tip. 
  11. Once the cupcakes are cool, pipe a dollop of frosting on each cupcake and top with a coffee bean to decorate.  Expresso cupcakes
