You will need the following items to make this recipe:
Measuring cups and spoons, peeler, knife, cutting board, small spoon
Ingredients:
- 1 cucumber, peeled and sliced into 18 pieces
- ⅓ cup feta, crumbled
- 2 tbsp olive oil
- 1 tsp oregano
- 9 kalamata olives, sliced lengthwise
- 9 grape tomatoes, halved
Directions:
- Start by thoroughly washing the cucumbers under cool running water. Once clean, peel the cucumbers using a vegetable peeler to remove the skin, then slice them into rounds or half-moons, depending on your preference.
- Next, take the olives, pit them if necessary, and slice them into thin rounds. For the tomatoes, choose ripe, firm ones and cut them into bite-sized chunks or wedges for added texture.
- In a small mixing bowl, combine high-quality extra virgin olive oil with a generous sprinkle of dried oregano, stirring gently to blend the flavors.
Carefully fold in crumbled feta cheese, making sure each piece is coated with the olive oil mixture to enhance its creamy flavor.
- To assemble, take a cucumber slice and use a small spoon to add a dollop of the feta mixture to one corner.
Position a tomato to the right of the Feta, followed by a slice of olives placed neatly next to it.
This creates a tidy and appealing presentation.
- You can serve this refreshing dish immediately for the best flavor and texture, or if you prefer, refrigerate it for a short time until you’re ready to enjoy it. Just remember to serve it chilled for a delightful appetizer or side dish!
