Caprese Spinach Salads are one of my favorite salads.  I have to admit, I may love the juicy tomatoes and mozzarella cheese the most.  Who doesn’t love cheese?  The best part, no cooking is required.

You will need the following items to make this recipe:

Measuring cups and spoons,  peeler, knife, cutting board, small spoon

Ingredients:

  • 1 cucumber, peeled and sliced into 18 pieces
  • ⅓ cup feta, crumbled
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 9 kalamata olives, sliced lengthwise
  • 9 grape tomatoes, halved

Directions:

  1. Start by thoroughly washing the cucumbers under cool running water. Once clean, peel the cucumbers using a vegetable peeler to remove the skin, then slice them into rounds or half-moons, depending on your preference. Greek Salad Bites
  2. Next, take the olives, pit them if necessary, and slice them into thin rounds. For the tomatoes, choose ripe, firm ones and cut them into bite-sized chunks or wedges for added texture. Greek Salad Bites
  3. In a small mixing bowl, combine high-quality extra virgin olive oil with a generous sprinkle of dried oregano, stirring gently to blend the flavors.   4. To assemble, take a cucumber slice and use a small spoon to add a dollop of the feta mixture to one corner. Ingredients

  • 1 cucumber, peeled and sliced into 18 pieces
  • ⅓ cup feta, crumbled
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 9 kalamata olives, sliced lengthwise
  • 9 grape tomatoes, halved

Instructions

  1. Peel and slice the cucumbers, then slice the olives and tomatoes.
  2. Next, mix the olive oil and oregano in a small bowl and fold in the fetal to coat.
  3. Use a small spoon to add a little bit of feta to one corner of the cucumber slices. 
  4. Then add a cucumber to the right, an olive next to that.
  5. Serve immediately or refrigerate until ready to serve.
