Confetti Cupcakes Ingredients
- 1 box French vanilla cake mix
- 3 large eggs
- 1 C whole milk
- ½ C unsalted sweet cream butter softened
- 2 – 6.35 oz sprinkle mix containers that have 6 different colored sprinkles in them – (Found in walmart) only use purple, green, red and blue colors
Vanilla frosting Directions:
- 2 C unsalted sweet cream butter, softened
- 5 C powdered sugar
- 6 tbsp heavy whipping cream
- 1 tbsp pure vanilla extract
- Sky blue gel food coloring
- 1 large piping bag with a wide star tip
- Remaining Red, Blue, Green, and Purple sprinkles
Fondant Mermaid Tail ingredients
- 4.4oz blue fondant – found at
- Mermaid Tail fondant mold – amazon
- Wilton Color Mist – purple – amazon
- Wilton Color Mist – gold –amazon
- Cornstarch to help mold the fondant
Supplies Needed:
- Paintbrush with a small brush
- Baking sheet lined with parchment paper
- White cupcake liners
The Little Mermaid Cupcake Directions:
Cupcake Directions:
Preheat oven to 350 degrees and place the cupcake liners into the cupcake pan Using a standing mixer, beat the cake mix, eggs, milk and butter until combined and smooth
Using a medium bowl, combine the Purple, Green, Red and Blue sprinkles
Mix in 1/2 C of sprinkles into the cupcake batter
Fill liners ¾ way full and bake in the oven for 21 minutes
Remove and allow to cool completely
Frosting Directions
Using a standing mixer, beat the butter, powdered sugar, heavy whipping cream, and vanilla until combined, creamy and holds a peak
Beat in 5 drops of sky blue gel food coloring and mix until combined
Scoop the frosting a little at a time into the piping bag
Pipe a ring of frosting around the top of the cupcake
Dip the cupcake into the sprinkles and coat the frosting
Pipe a dollop of frosting in the center of the cupcake
Fondant Directions:
Remove the fondant from the package and place onto a cutting board
Dust your hands in cornstarch and work the fondant until soft and playable Dip the paintbrush into the cornstarch and brush the inside of the mermaid tail mold. Pinch off about 1 ½ tbsp of fondant and press it into the mold
Allow for the fondant to set for 3 minutes before peeling back the mold to remove the mermaid tail
Place the tail onto the cookie sheet
Repeat steps to make 17 more tails
Once all 18 tails have been made, set on the counter to dry overnight
Using the purple color mist, lightly spray the fin on the tail
Using the gold color mist, spray the entire tail lightly.
Place into the frosting on top of the cupcake and enjoy!
