Peeps Bunny Dirt Cupcakes Ingredients:
For Cupcakes:
1 2/3 cup all-purpose flour
1 cup granulated sugar
1/4 teaspoon baking soda
1 1/2 teaspoon baking powder
1/4 teaspoon kosher salt
3/4 cup unsalted butter; softened
3 egg whites room temperature
1 tablespoon vanilla extract
1/2 cup sour cream
1/2 cup whole milk
For Frosting:
1 tablespoon vanilla
2 cups confectioner’s sugar
1 cup unsalted butter; room temperature
1 tablespoon heavy whipping cream
2 tablespoons Ghirardelli’s cocoa powder
10 oreo cookies; blended
12 blue peeps bunnies
24 carrot sprinkles- on Amazon or Target
Peeps Bunny Dirt Cupcakes Instructions:
For Cupcakes:
Preheat the oven to 350 degrees Farenhight. Place cupcake liners into a 12-cup muffin pan.
Sift the flour, sugar, salt, baking soda, and powder into a large bowl and then whisk together.
Separate the egg whites from the yolks. (you only need the whites for this recipe)
In another bowl, whisk together the wet ingredients until combined. The batter will be lumpy.
Add the wet ingredients to the dry ingredients. Mix well until combined.
Distribute the batter evenly into cupcake liners, filling each paper with about 2/3 the way up.
Bake for about 22 minutes or until a toothpick comes out clean. Let cool before frosting.
For Frosting:
Whip the butter and salt together for about a minute. I like using a stand mixer fitted with a paddle attachment.
Sift in the confectioner’s sugar in several batches beating on low after each addition. Scrape the bowl down and repeat the process.
Add a tablespoon of the heavy whipping cream while mixing on low. Then add the vanilla. Add the cocoa powder. Beat until you have an even, fluffy consistency.
Blend Oreos in a food processor or blender. (If you need to get your aggression out, put the Oreos in a Ziploc bag and smash them with a meat tenderizer hammer :))
Fill a pastry bag with your frosting.
Decorate the cupcakes with chocolate icing and top with Oreo crumbs, and carrot sprinkles.
Add the Peeps bunnies into the “dirt.” Push a toothpick in the bottom of the peeps and then into the cupcake to help it stay in place.
