If you are looking for an easy recipe that can be made without a hand or stand mixer this is it! This recipe requires only a cake mix, melted butter, one egg, and food coloring – all of which can be stirred with a wooden spoon inside one (or two) small mixing bowls.
Earth Day, April 22nd, is one of those holidays that we all come together to celebrate our earth. When my son was in elementary school, they always celebrated by planting trees and then a fun class party. The day of celebration helped them learn how important our Earth is and why we should do our very best to take care of it with recycling, reusing, and replenishing. We want to teach them the same lessons. And, of course, the fun parties! Take a look at these fun Yummy Earth Day Cookies & Treats! They are sure to pique their interest!
Earth Day Cupcake Ingredients:
- 1 box chocolate cake mix + additional ingredients per box directions
- OR make homemade Chocolate Cupcakes
- Blue and green frosting, in piping bag on opposite sides
- Pretzel sticks
- Candy hearts
- 2 oz white chocolate, melted with green oil based food coloring
Earth Day Cupcakes Instructions:
Bake cupcakes per recipe and cool completely
Lay pretzel sticks 2 inches apart on a wax paper lined tray
Melt white chocolate with green color for the leaves
Pour into piping or food storage bag and snip of a tiny portion of the tip
Pipe chocolate leaves over the pretzel sticks to create little plants
Place in refrigerator to set
Pipe dual colored frosting onto each cupcake
Place candy heart in desired position
Press chocolate pretzel plants into frosting
