And because the dry-aging process removes a lot of the water content from the meat, it’s perfectly suited to be frozen straight away. Then once it’s thawed out, you still have that great dry-age flavor and quality.

Let’s Get Crusty
When you dry-age beef properly, you will notice a hard crust that forms on the outside of the meat. Don’t worry, this is a part of the process! The crust is called the pellicle. It forms as the meat loses water through the dry-aging process. It should be cut away before you store or cook your dry-aged beef. But don’t throw it away! It can be ground up in the food processor and added to ground beef for chili, tacos, and more. It’s full of flavor and makes a great addition to any dish with ground beef.
