These fun Santa Hat Cupcakes are the perfect sweet treat to bring to parties for all ages. Or just make some for YOU! The best part- these are homemade white chocolate cupcakes- no store bought mixes are used in this recipe!

Get ready to get creative- let’s make these fun cupcakes!

Red Fondant Bow Ingredients: 

  • 1 – 4oz package Red Fondant (Found at Hobby Lobby) 
  • 1 Wilton Bow silicone mat 
  • 1 C powdered sugar 
  • 1 small paint brush 
  • Cutting board 

Fondant Bow Directions: 

Lightly dust a cutting board with powdered sugar 

Using your hands, knead the fondant until it is soft and easy to mold 

Take the paint brush and dip it into powdered sugar 

Place the Wilton silicone mat onto the cutting board and using the paint brush, lightly dust the small bow mold. This helps keep the fondant from sticking to the mold 

Pinch off about 1 ½ tsp of red fondant and push it into the bow mold 

Allow it to set for 5 mins before carefully removing from the mold 

Place onto the cutting board and continue making 11 more bows 

Allow to bow to sit overnight 

Chocolate Cupcake Ingredients:

  • 1 C Flour 
  • ½ C Hershey dark cocoa 
  • ¾ tsp baking powder 
  • ½ tsp baking soda 
  • ½ tsp salt 
  • ½ C light brown sugar 
  • ½ C sugar 
  • ⅓ C canola oil 
  • ½ C buttermilk 
  • 1 large egg
  • 1 tsp vanilla extract 

Minnie Mouse Christmas Cupcakes!

Cupcake Directions:

Preheat the oven to 350 degrees and line the cupcake pan with cupcake liners

Using a large bowl, whisk the flour, cocoa, baking powder, baking soda and salt

Using a standing mixer, beat the brown sugar, sugar, canola oil, egg, and vanilla until combined .

Alternate between the buttermilk and flour until combined and smooth 

Fill the cupcake liners about ¾ way full 

Bake in the oven for 21 minutes or until the top bounces back 

Allow to cool completely 

Vanilla Frosting Ingredients:

  • 2 C unsalted sweet cream butter, softened 
  • 5 C powdered sugar 
  • 2 tsp pure vanilla extract 
  • 6 tbsp heavy whipping cream 
  • Red and Green gel food coloring 
  • 3 large piping bag with large star tips 
  • 2 medium bowls 
  • 1 – 8oz bag of milk chocolate Ghirardelli melting wafers 

Frosting Directions:

Using a standing mixer, beat the butter, powdered sugar, vanilla and whipping cream until combined, smooth and fluffy. Traditionally this will take about 5-7 minutes to whip 

Scoop 2 C of frosting into both of the bowls 

Mix in a few drops of red gel food coloring into 1 bowl and a few drops of green gel food coloring into the second bowl 

Cut the tips off the piping bags and make sure the star tip fits through the opening 

Scoop red frosting into 1 piping bag, green frosting into the second one, and then white frosting into the third piping bag

 

How to decorate your Minnie cupcakes:

Minnie Mouse Christmas Cupcakes! Remove the cupcakes from the cupcake pan and place onto a cutting board or cookie sheet.

Using the red frosting, pipe a large ring around the top of the cupcake.

Using the green frosting, pipe a slightly smaller ring around the top of the red frosting. Repeat the step with the white frosting

Using the Ghirardelli melting wafers, place one on each side for the ‘Ears’ Place the red bow in the middle of the ears
