Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting

If you love Red Velvet Desserts, don’t miss my new favorite cupcake: Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting.  You’d think they would be heavy and super sweet, but they’re not!  In fact, they are light and airy and so delicious, they will become your new favorite cupcake too! They do use a Red Velvet Boxed Cake Mix, but with the added Greek Yogurt and Milk, they have an amazing flavor and texture!

Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting

Ingredients needed for the cupcakes:

Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting

  • 1 box red velvet cake mix
  • 3 eggs
  • 1/3 cup of oil 
  • 1 cup of milk
  • 1/2 cup of plain greek yogurt
  • 2 tsp. vanilla extract 

Ingredients needed for whipped cream cheese frosting:

Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting

  • 8 oz. cream cheese
  • 1-2 cup powdered sugar (personal preference)
  • 3 tsp. vanilla extract 
  • 2 cups heaving whipping cream 
  • Fresh blueberries for decorating

Directions for Creating the Red Velvet Cupcakes with Whipped cream cheese frosting:

  • Preheat your oven to 350 degrees and line cupcake pans with cupcake liners.
  • Empty cake mix into a large mixing bowl.

  • Add eggs, oil, milk, Greek yogurt and vanilla extract.

Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting

  • Stir until batter is smooth.

Red Velvet Cupcakes with Homemade Whipped Cream Cheese Frosting

  • Fill cupcake liners 3/4 full and bake for 15-20 min or until inserted toothpick comes out clean.

  • Let cool completely before adding frosting.
  • Time saver tip: Make your frosting while the cupcakes are cooking.
  • With an electric mixer beat cream cheese and powdered sugar until smooth.  
  • Add vanilla extract.
  • SLOWLY add heavy whipping cream and beat until fluffy.

  • Pipe onto cooled cupcakes and top with blueberries to complete your patriotic cupcakes!
