Easy Brownie Waffle Ice Cream Sandwiches

This fun and easy dessert combines two of my most favorite things- Brownies and Ice Cream!  They have the added bonus of the waffle texture- perfect spots to be filled by creamy ice cream!  These easy Brownie Waffle Ice Cream Sandwiches are great for weekend treats.  The whole family will love them and beg you to make more!  Make them to your liking with your favorite ice cream flavor!

  • Makes 8 ice cream sandwiches
  • Prep time: 10 minutes
  • Cook time: 8 minutes per waffle
  • Freezing time: 2 hours

Brownie Waffle Ice Cream Sandwiches

Ingredients:

  • 1 box brownie mix, prepared
  • 2 cups vanilla ice cream, softened

You’ll also need:

  • Belgian Waffle Maker
  • Nonstick Cooking Spray

Instructions:

Preheat Belgian waffle maker.

Prepare brownie mix according to package instructions.

Easy Brownie Waffle Ice Cream Sandwiches

Spray the top and bottom plates of the waffle maker with nonstick cooking spray. Scoop 1/3 cup batter onto the waffle maker and close the lid.

Cook the waffles for 6 to 8 minutes, until the waffle maker stops steaming.

Carefully remove the waffle from the waffle maker and allow to cool completely.

Separate the waffles into four slices. Place half the slices on a large plate or baking sheet.

Spread the softened ice cream over the top of each of the waffle slices- we used vanilla ice cream, but choose your favorite flavor . Place remaining waffle slices on top of the ice cream.

Place the ice cream sandwiches in the freezer and freeze for at least 2 hours before serving.

Make these easy Ice Cream Treats for the whole family! You only need Brownie Batter, a waffle maker and Ice Cream!

Ingredients
