FUN UFO Cupcake Recipe
Yields: 12 cupcakes
Ingredients:
Your favorite chocolate cake box mix (and all the ingredients to make it – we suggest dividing the mix and ingredients in half to yield one dozen cupcakes**)
7-8 oz. white rolling fondant
2-3 oz. green rolling fondant
1 stick butter, softened
2 cups confectioners’ sugar
2 tbsp milk
Black gel food coloring
12 candy googly eyes
36 candy-covered chocolates
**Most standard cake box mixes yield in 24 cupcakes
How to make these fun UFO Cupcakes:
Prepare cupcakes according to the package’s directions. Bake and allow to cool completely before decorating.
As the cupcakes cool, prepare the fondant pieces. Roll out white fondant until it’s about 1/3-1/2 inch thick.
Use a circular cookie cutter from Flycalf. Cut out 12 circles that are about 2 inches in diameter.
Using a paring knife, trim two sides of each fondant circle, removing about 1/3 of an inch off (for each side).
Next, trim off about 1/3 of an inch from the bottom – this will result in a square-like shape (with a rounded top). They should each come out to be 1 ½ inches x 1 ½ inches in size.
Roll out green fondant until it’s about ¼ of an inch thick.
Use a circular cookie cutter, about 1 inch in diameter and cut out 12 green fondant circles. Set aside.
In a large bowl, beat together softened butter, confectioners’ sugar and milk. Start on low speed and increase to high.
Once the buttercream forms, add 2 small drops of black gel food coloring. Beat until buttercream is completely tinted.
Apply some buttercream on the back of each green fondant pieces and place one on each white fondant piece.
Apply a dot of buttercream on the back of each candy googly eye on place on the center of each green fondant piece.
Scoop the remaining buttercream into a piping bag with Wilton round tip #12 attached.
Frost each cupcake.
Place the UFO fondant pieces on the center of each cupcake.
Place 3 candy-covered chocolates on each cupcake, right in front of the UFO fondant pieces.
Serve and enjoy!
