If your family is like mine, you’re always looking for great new snacks for Basketball season! I have discovered that using Rotel Original Diced Tomatoes and Green Chilies and Rosarita Traditional Refried Beans, brings my appetizer snacks to a whole new level of taste and fun! After making these fun bite-sized Mexican treats- I knew we needed to rename them to Mexican Miracles! It’s a miracle they even lasted 5 minutes! The first step to making great game time appetizers is to get your Rotel and Rosarita at Walmart. You can find them in the Mexican or International Aisle.

Ingredients needed for the Mexican Miracle Bites:
- 1 can of Rosarita Traditional Refried Beans
- 1 can of Rotel Original Diced Tomatoes and Green Chilies
- 1 lb. of Lean Ground Beef
- 3 Tablespoons of Taco Seasoning
- 1/8 cup of milk or water
- 1/2 cup of Sour Cream
- 1/2 cup of Shredded Cheese
- Guacamole
- Scoop nacho chips of your choice
How to make these Easy Mexican Miracle Bites:
Preheat the oven to 375 degrees.
Brown the Ground beef and drain the fat.
Add Rosarita Refried Beans to the meat.
Stir in 3 tablespoons of Taco Seasoning along with 1/8 cup of water or for a thicker mixture, use milk.
Stir in 1/2 can of Rotel Original Diced Tomatoes and Green Chilies- save the rest to top your creations.
Heat the mixture until thick, stirring frequently.
Now you’re ready to assemble these fun appetizers!
One a non-stick baking sheet, spread out your scoop chips.
In each scoop, add a teaspoon of meat mixture and Rotel.
Add shredded cheese to the top of each scoop.
Bake in the preheated oven until the cheese is melted- about 10 minutes. I checked mine at about 7 minutes.
Top your Mexican Miracle Bites with sour cream and/or guacamole.
Serve and enjoy!
