If you’re looking for a fun summer dessert or an eye-popping birthday cake for one of the kids, then look no further! This awesomely fun Electric Candy Cake is truly a show stopper! It’s also as delicious as it looks! The kids are sure to squeal in delight when they see this fun creation!

Ingredients
2 boxes of white cake mix
6 large eggs
2 C whole milk
1 C unsalted sweet cream butter, softened
pink gel food coloring
3 9 in round cake pans
1 10 in round cake board
cake leveler
Blue Vanilla Frosting
3 C unsalted sweet cream butter, softened
6 C powder sugar
2 tbsp pure vanilla extract
5 -7 tbsp heavy whipping cream
neon blue gel food coloring
Angled spatula
Medium ice cream scooper
1 large piping bag with large star tip
Toppings
Different types of pink, blue and purple whirly pops, rock candy, Unicorn horn lollipops
Directions
Preheat oven to 350 degrees and spray the cake pans with Pam baking spray.
Using a standing mixer, beat together the cake mix, eggs, milk, and butter until combined and smooth.
Beat in 3-5 drops of pink food coloring and mix until combined. Add in a few more drops if the pink isn’t the bright shade you would like.
Divide the batter evenly between the 3 cake pans and bake in the oven for 3-40 minutes or until a toothpick poked into the center comes out clean.
Allow to cool completely.
Remove cakes from cake pans; using the cake leveler, remove the tops of the cakes to even them out.
Place one cake round onto the cake board.
Vanilla frosting
Combine all ingredients, except the food coloring, and mix until the frosting is creamy and smooth but stiff.
Mix in a few drops of the neon blue food coloring until combined.
Scoop about 1 C of frosting into the piping bag.
Using the ice cream scooper, scoop out 5 scoops of frosting onto the cake round that’s on the cake board.
Using the angled spatula, spread evenly.
Place another cake round on top of the first.
Scoop more frosting onto the second cake round and spread evenly.
Place the last cake round on top of the second layer of frosting.
Using remaining frosting in the bowl, frost entire cake.
Using the piping bag, pipe dollops of frosting around the top of the cake.
Have fun with your candy toppings!
Cut into slices and enjoy!
