Happiness is hot soup on a cold day. These three soups are guaranteed to warm you up during the wintry weather!
1. Hearty Beef Stew
This irresistible stew will keep those winter blues away. So easy to make, too!
Ingredients:
- 2 pounds cubed beef
- 3 Tbsp. vegetable oil
- 4 cubes beef bouillon
- 4 cups water
- 1 tsp. dried rosemary
- 1 tsp. dried parsley
- 1/2 tsp. black pepper
- 3 large potatoes, peeled and cubed
- 4 carrots, chopped
- 4 celery stalks, chopped
- 1 large onion, diced
- 2 tsp. corn starch
- 2 tsp. cold water
Directions:
In a large pot, brown beef in oil over medium heat. Dissolve bouillon in water and pour into pot. Stir in rosemary, parsley, and pepper. Bring to a boil, reduce heat and simmer for one hour.
Stir potatoes, carrots, celery, and onion into the pot. Dissolve corn starch in cold water and add to stew. Cover and let simmer for one more hour. Delicious served with Klosterman Baking Company’s rolls.
Serves 8 people.
2. French Onion Soup with a Twist
This is a great new take on a classic! Packed with warmth and flavor, this soup pairs great with winter.
Ingredients:
- 2 medium onions
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1/2 tsp. sugar
- 1 1/2 Tbsp. flour
- 1/2 cup white wine
- 6 cups vegetable stock
- 1 cup water
- 6 slices of Klosterman King Challah Bread
- 6 slices of munster cheese
Directions:
Heat oil and butter in large pot over medium-low heat. Add sliced onions and cook 10-12 minutes until softened. Add sugar and let caramelize for 30-40 minutes, stirring occasionally.
Once caramelized, sprinkle with flour and cook for 3-5 minutes. While stirring, pour in the wine and vegetable stock. Bring the soup to a simmer and let cook for about 30 minutes.
Ladle soup into oven-proof bowls, add toasted challah on top and Munster cheese. Throw them into the broiler for 3-5 minutes until cheese is bubbling.
Serves 6 people.
3. Easy Broccoli Cheese Soup
With only 5 ingredients, this soup is simple and mouth-watering.
Ingredients:
- 6 cups chicken broth
- 4 cups broccoli florets
- 1 large white onion, diced
- 2 (15 oz) cans evaporated milk
- 4 cups sharp cheddar cheese, shredded
Directions:
In a large pot over medium heat, stir in broth, broccoli and onion. Once boiling, add evaporated milk and cook until returns to a simmering boil. Remove from heat, stir in cheese, and serve warm.
Serves 8 people.
