Brrrr! It’s cold outside! Have you had any snow yet this year? Some like snow and others don’t. However, I think we can all agree that a snowman can brighten anyone’s day! So, I thought, why not make a batch of fun Snowman Cupcakes?! These delicious cupcakes are easy to make and delight both kids and adults.
To make it super easy, I started with a boxed cake mix and then made a super easy homemade frosting. From there, it is simply adding some embellishments and there you go – a happy, smiling snowman that will melt in your mouth instead of the sun! Easy Snowman Cupcakes Recipe & Tutorial
Ingredients:
1 box Devil’s Food Cake Mix
1 cup shortening (I use Crisco)
2 sticks (1 cup) butter, room temperature
4 cups powered sugar
1 Tblsp. vanilla extract
2 Tblsp. water
Coconut
Mini Marshmallows
Chocolate chips
Mini chocolate chips
Orange M&M’s
Instructions:
Preheat oven to 350 degrees.
Mix boxed cake mix according to instructions. Pour into greased muffin tins and bake.
Remove from oven and allow to sit 1-2 mins, then immediately remove to cooling rack (helps prevent sticking).
Allow to cool completely.
Frosting Instructions:
Add the shortening, room temperature butter, powered sugar, vanilla, and water into mixing bowl.
Mix until smooth and creamy. Set aside.
Add a small amount of coconut to a plastic bag. Then, add a few drops of food coloring gel and a few drops of water to the bag to dye the coconut. Repeat using a separate bag for each color you want for the toboggans.
Frost the cupcakes with a layer of frosting.
Add mini marshmallows in a curved line over the face, with one mini mashmallow on the top edge of the cupcake.
Use the white coconut and cover the face area and add the colored coconut as the tobaggan.
Add two regular size chocolate chips as the eyes. Then, use the mini chocolate chips, form a smile.
Break an M&M in half and add as the nose.
Slip them into a decorative cupcake holder and that’s it! You’re done!
