Low Carb Cheeseburger Casserole
Fall has officially set in here in the Carolinas. There’s a special crispness in the air, I wish we could bottle this up and keep it year round! As the leaves fall and the days grow shorter – my waist seems to thicken… Anybody with me on this one?
I’m on the hunt for low-carb yet tasty food these days. Let me tell you, I have found one recipe that will be a staple on my monthly menu! Low Carb Cheeseburger Casserole – Yummo! It has the cheese and hamburger the kids love and the low carb ingredients I love. Check out the recipe for our new family favorite Cheeseburger Casserole below.
This dish is super simple to make and personifies comfort food – without the guilt! Paired with some buttery veggies or a salad – Perfection! My kids all gobble this up and never realize they are eating a pretty balanced meal.
On a side note – you don’t want to load this down with mashed potatoes or mac-n-cheese – that will kind of nullify the “low carb” thing ya’ got going! 🙂

Ingredients needed for Cheeseburger Casserole:
Meat Mixture:
3 lbs. of meat
1 packet Onion Soup Mix
1 12 oz bag Cheese of choice
Garlic Powder (optional but why wouldn’t you?!?)
Topping:
1/2 Cup Mayonnaise
1/2 Cup Heavy Cream
2 Eggs
Directions to make Cheeseburger Casserole:
Start by browning your hamburger and draining off any excess fat.
While the meat is browning, go ahead and mix the topping ingredients together.
After meat has cooked thoroughly and you’ve drained off the fat mix in the onion soup (and cheese if you’re using shredded option). You can use shredded cheese or sliced cheese in this recipe. I’ve used both and can’t really tell a difference either way. I chose to use regular American sliced cheese layered between hamburger. I also like to put some garlic powder in with the onion soup mix – SO GOOD!
Place meat mixture in casserole dish and spread topping mixture to cover completely.
Sprinkle with some shredded cheese of your choice (I love Mozzarella) and bake for 35-40 minutes and enjoy! This is one that you can jazz up anyway you’d like: add some pickles, top it with ketchup, or eat it over a bed of lettuce. I always try to portion it out so we’ll have leftovers, personally I think it’s better the second day!
If you want a lower fat option, you could use venison or turkey meat. I’ve used turkey doused in Worcestershire sauce in the past and the fam was none the wiser.

Serves: 8 servings
- Casserole:
- 3 lbs. of meat
- 1 packet Onion Soup Mix
- 1 bag Cheese of choice
- Garlic Powder (optional)
- Topping:
- ½ Cup Mayonnaise
- ½ Cup Heavy Cream
- 2 Eggs
- Preheat oven to 350
- Brown Meat and drain excess fat
- After Meat is cooked thoroughly mix in Onion Soup Mix
- If you're using shredded cheese Mix in ¾ of bag now ( I used sliced cheese so I layered it)
- Place in casserole dish
- While You're waiting for the meat to brown mix together all topping ingredients. Stir well
- Cover top of casserole with topping mixture
- Add remaining cheese evenly on top of mixture
- Place in preheated oven
- Go enjoy a nice cup of Joe and watch the leaves as they dance to the ground! 🙂
