When it comes to Brussel Sprouts there are troops on both sides. You either like them or you don’t, right? Well, maybe not! Don’t discount them just yet! While there are several different ways to cook Brussel sprouts, I believe roasted is my favorite. This Roasted Brussel Sprouts with Bacon recipe may just change a lot of peoples minds on whether they like them or not!
By roasting the Brussel sprouts, it gives them a nice nutty sweet flavor. The bacon adds to the flavor with it’s saltiness, making a mouthwatering combination! Roasted Brussel Sprouts with Bacon
Prep time: 10 mins
Cook time: 30 mins
Servings: 4-6
Ingredients:
1-1/2 lbs Brussel Sprouts (can use fresh or frozen. If using frozen, allow to thaw)
6 slices of bacon
3 Tbl extra virgin olive oil or canola oil
1 tsp Kosher salt
1/2 tsp black pepper
Shredded Parmesan (sprinkled on top if desired)
Instructions:
Preheat oven to 375 degrees.
Fry the bacon slices in a skillet until crispy. Set aside.
While the bacon is frying, prepare the Brussel sprouts. Cut each one in half lengthwise into a large bowl. You want the bowl large enough to stir them around in.
Add 3-4 tablespoons of extra virgin olive or canola oil works just as well.
Add the kosher salt and black pepper.
Stir, making sure to coat all the sprouts.
Spread Brussel sprouts evenly on a cookie sheet and place in oven.
While they are in the oven, crumble the slices of bacon.
Cook 15 minutes and then using a spatula, flip them over and continue baking another 10 minutes. Take out once again and sprinkle the bacon evenly across the Brussel sprouts. Stir around and mix it in. You can taste-test for salt at this point. I opted to add a little table salt. Return to the oven and bake another 5 minutes.
Place in serving bowl and sprinkle with shredded parmesan cheese, if desired.
