Cookie day has become my six year old son’s favorite day of the week. He climbs into my lap and helps me choose pictures for our Spectacular Cookie series. When we’re done, he tells me which cookie was his favorite. (Meaning, which cookie he wants us to try to recreate.) This week he chose one of the easy cake mix cookies in our roundup — a kid after my own heart! Cake mix cookies are my favorite because they don’t require the use of my stand mixer, my kids can prepare them by themselves, and there are so many options!
