Quick and Easy Chicken Tetrazzini
There is nothing quite like a bowl of Chicken Tetrazzini. It warms you with comfort, and a delicious taste. This recipe has been a staple in my life, and I have fond memories of my mother making it. Now I am a mother of three, and my children love this pasta dish. It is rich in flavor, yet easy to make. No one will know you made this decadent dish in about thirty minutes. I will not tell if you don’t!
Chicken Tetrazzini ingredients:
- 1/4 cup butter
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup chicken broth
- 1 cup heavy whipping cream
- 2 cups cooked chicken
- 1/2 cup Parmesan cheese
- 12 ounces penne pasta
To begin, you want to boil a pot of water for the pasta. Once it comes to a boil, pour in the noodles, and allow to boil for twenty minutes or until tender. While that is happening get a large frying pan out to make the sauce. In the large frying pan, melt the butter over medium high heat. Once it is melted, add in the flour and the seasonings. Then mix it, and cook until it is bubbly. At this point remove the pan from the heat and add in the chicken broth and heavy whipping cream. Return to stove top and heat until it boils, stirring it frequently.
Then add in two cups of cooked chicken, and stir well. I use rotisserie chicken, and just pull it off the bone in small shreds. I use mostly white meat since it is my husband’s favorite.
By this time your pasta should be done. Drain it and add it into the frying pan with the sauce, mixing the two well. Now it is time to add the most noteworthy ingredient in the recipe: Parmesan cheese. It alters the entire consistency of the sauce. Mix the Parmesan cheese into the pan, and stir very well.
Now your Chicken Tetrazzini is complete and ready to serve. It tastes great hot, in addition to left over. This is one left over my family fights over to get to eat. There is not enough left over for all five of us to eat it, so therein lies the trouble.
Furthermore you can match it with a great garden salad and some garlic bread and you have a complete dinner that leaves the family happy, and you looking like a star chef. File this recipe because they will ask for it again even if they can not remember the name! My kids still call it all sorts of things, but they truly love the way it tastes.
