I have a teenage daughter who refuses to eat anything with bones, and won’t touch dark meat. In an effort to please her I started adding grilled chicken breast to our meal. I decided to teach her a lesson.
I made my BBQ Chicken Bacon Melt and told her to try it. She immediately says “It looks great, really beautiful, but I’m not eating this…”
(smile) “Yes, you are.”
She ate it and in the first two bites she gave me looks that shot through me like fireballs and laser beams. When she proceeded to take the third bite, I knew I had her. By the time she ate half of it, I was teasing her about enjoying it too much —
“Wait, I really didn’t make that for you.
I thought you’d hate it and the rest would be mine — give it back!”

BBQ Chicken Bacon Melt Recipe
Ingredients:
- 4 Chicken Breast
- 1/4 Cup BBQ Sauce
- 8 slices Bacon (thick cut)
- 8 oz Colby Cheese, sliced
- Salt, pepper
- 1/2 cup sliced green onions (optional)
Directions:
Rinse and pat chicken dry. Add salt, pepper, and BBQ Sauce (optional). Grill chicken breast until internal temperature reaches 160 degrees.
While chicken is grilling, cook bacon (sauté pan, or in oven), and set aside.
Remove chicken from grill. Top with BBQ sauce, two bacon slices, and covered with colby cheese. Return to grill until cheese is melted.
Serve BBQ Chicken Bacon Melt garnished with green onions.
