One of the best gifts I ever received was an Ice Cream Maker from my friend. For years my husband begged me to get one and I turned him down because I was afraid it would be useless. “Useless” it is not! My ice cream maker is now one of my favorite kitchen gadgets — mostly because I am obsessed with cheesecake ice cream. It all started with a basic no-bake cheesecake recipe, and “churned” into some of the most delicious frozen goodness ever! I have been perfecting this recipe for years, and I think I finally have my winner! This recipe has strawberry bites and even bits of cheesecake crust for that true cheesecake taste! Yum!
Strawberry Cheesecake Ice Cream Recipe
Ingredients:
- 2 pkgs Cream Cheese
- 1 cup granulated sugar
- 2 cups half and half
- 1 cup diced strawberries
- 1/2 cup graham cracker crumbs
- 2 tbsp granulated sugar
- 4-6 tbsp melted butter
Directions:
Add cream cheese and 1 cup sugar to stand mixer (whisk attachment), and mix until smooth. Slowly add half and half while mixing on low. Once cream cheese, sugar, and half/half is mixed well, add to ice cream machine. Churn ice cream according to manufacturer’s instructions.
Combine graham cracker crumbs, 2 tbsp sugar, and melted butter until a dough forms. Place small bits/balls of dough onto a wax paper lined baking sheet. Freeze until ice cream is finished churning.
Freeze diced strawberries on baking sheet.
Once the ice cream has finished churning in your ice cream maker, fold in frozen strawberries and graham cracker bits. Freeze until ice cream reaches desired hardness.
