Easter Bunny Butt Cake
Want a cute dessert for your Easter table?
There are the traditional coconut Easter Bunny cakes, but I have a twist on the norm. This Easter Bunny Butt Cake is whimsical, sweet and oh so easy to make.
I have taken a box cake mix (strawberry, per the request from my daughter) and baked it in a glass bowl. Not every bowl is oven proof, so be careful which bowl you use. There are bowl-shaped baking pans out there that you can use, however, if you don’t have one, don’t fret. Glass bowls work just as well.
Like I said, I used a box cake mix from the grocery store to make this bunny. I have many recipes for cake batter, but, why not use a box mix? They taste good, they are moist and I know they are going to turn out perfectly. After preheating the oven to 350 degrees, I mixed the batter according to the directions on the box.
I sprayed my bowl with non-stick spray. I also sprayed a muffin tin (only six of the cups) so I could make the feet and tail. I poured the cupcakes first and then put the rest of the mix in the bowl, placed in the oven and let the cakes cook.
While I waited, I pondered whether I should make my icing or just use the can icing from the grocery store. Easy won out and I went on to “dye” my grass a deep green. This is so easy it’s not even funny. Take your coconut that you want to make a different color, a few drops of food coloring (and use a glove so your fingers don’t turn an unnatural shade), combine and voila! Colored coconut that is edible.
Putting the Bunny’s Butt together is pretty simple. Take two cupcakes (without liners) and attach them to the cake you baked in the bowl with a little icing as the “glue”. Take a third cupcake, cut the top off so that the “tail” is smaller than the “feet” and “glue” it to the top of the cake, centered between the “feet”.
Ice the whole bunny…feet and all. Then take the white coconut (uncolored) and press it to the icing. This will give your bunny a fluffy effect. Take your colored “grass” and spoon it around the cake plate.
I wanted the “feet” to look like “feet” so I took a piece of pink candy and made the little pads on the bottom of the feet. This is accomplished a lot easier if the candy you use is pliable. I had to heat my candy in the microwave for about 10 seconds in order to get it soft enough to mold.
That is all there is to it! Your Bunny Butt Cake will be the hit of your Easter Celebration. You could even decorate the plate with egg candies to add to the presentation. This time of year is so much fun!
