This week’s Monday Mealplan is featuring Having Fun Saving. I had such a wonderful time searching through her recipes to find a few of my favorites for you. While I was there I noticed she really loves smoothies and has several wonderful smoothie recipes for her readers. Monday – Stuffed Peppers – Make Ahead Meal
This is one recipe I wish I had seen during gardening season because you can make these Stuffed Peppers in advance, freeze them, and pull it out when you need it. That makes Having Fun Saving’s Stuffed Peppers the perfect Monday Meal because who wants to cook on Monday? Not me!
Tuesday – Korean Beef

My family is traveling back to Florida from out West so I couldn’t resist adding something West-like for you this week. This Southwest Chicken is a crockpot meal that you will have on your menu for years to come! Enjoy.
Thursday – Pumpkin Grilled Cheese Sandwich
Pumpkin. Grilled. Cheese. Do I need to say more? In case you missed it, this is pumpkin grilled cheese!!! Yummy! (Serve alone, with a salad, or your favorite chips)
Friday – Chicken Pad Thai

Saturday – Blackened Salmon with Maple Reduction
Blackened fish is the only way to go! My husband is not a fish guy but he will eat any fish I give him if it is blackened.
