Welcome to the Eat In Challenge. We have been working hard to bring you easy and more healthy recipes since January. Below is a linky full of all different types of recipes and something for everyone. With Summer coming and school ending it’s a great opportunity for us to cook and bake more at home.
Victoria, my amazing senior staff writer, makes these Cake Mix Cookies– so easy her 4 year-old did most of the work. She made some for Earth Day:
This recipe requires only a cake mix, melted butter, one egg, and food coloring – all of which can be stirred with a wooden spoon inside one (or two) small mixing bowls. To read all the instructions, go HERE.
Baking can be fun but it can be frustrating too when you have to worry about the creation you worked so hard on sticking to the pan. Bakeit Fun Silicone baking mats, let you bake without the worry of your baked goods sticking to tthe pan. Simply put the mat on a baking sheet and place your cookies on the mat. There are even little circles showing you how far apart to space your cookies.
After baking your cookies or other baked goods they will easily slide off of your baking mat and onto the baking rack to cool. When you’re done simply wipe the mat clan and either lay flat in the pans for easy storage or roll it up.
