All month long Mom Does Reviews and our bloggy friends have been preparing delicious recipes featuring Post’s Alpha-Bits cereal. Everyone has been using them in such creative ways that Mom Does Reviews was inspired to do more – another great way you can use your preschooler’s favorite cereal. Our result was our second addition for your Thanksgiving children’s table, Alpha-Bits Cream Pie!
Let the parents keep the pumpkin pie and allow your young Thanksgiving guests to enjoy their OWN pie this year with Alpha-Bits Cream Pie! The little ones will enjoy finding all of the letters on their plate and having a pie they can tell their parents to stay out of!
Our no bake Alpha-Bits Cream Pie is made with cream cheese, instant pudding, milk, sweetened condensed milk, and whipped cream! What I love about this recipe the most is that playing with the quantity of your favorite ingredient adds subtle changes to please your own pallet. For example, I am a cream cheese lo-VVV-er, and I often make a variation of this dessert using two blocks of cream cheese. The result is very “cheesecake” – yum!
- 2 cups Alpha-Bits Cereal
- 3 tbsp Melted Butter
- 3 tbsp Sugar
- 8 oz package Cream Cheese (softened)
- 14 oz Sweetened Condensed Milk
- 5.1 oz Pkg. Vanilla Instant Pudding Mix
- 2 Cups Cold Milk
- 16 oz Whipped Cream
- 1/2- 1 cup Alpha-Bits Cereal
Melt butter in deep pie dish. Add 2 cups crushed Alpha-Bits Cereal and mix well. Press mixture firmly into the bottom of the pie dish until entire bottom is covered. Chill crust until filling is prepared.
Combine cream cheese and sweetened condensed milk until smooth. Add vanilla instant pudding package and two cups cold milk to the cheese and condensed milk mixture – continue to blend until all ingredients are combined. Fold one cup whipped cream into custard. Pour custard mixture onto cereal crusted pie dish. Smooth mixture until level. Top with remaining whipped cream. Chill until ready to serve.
DO NOT ADD CEREAL TOPPING UNTIL READY TO SERVE. Cereal topping will lose crunch in the refrigerator, don’t add cereal until serving.
Pie Topping Activity:
Allow your guests to add their own Alpha-Bits on top of their pie! Not only will this insure your topping retains its crunch, but it is also an interactive way children can enjoy their treat. Some children may choose to spell their names, others will want to crush their Alpha-Bits on top – whatever they do, they will have FUN! What could be better than a FUN delicious pie at Thanksgiving?
